Summer Veggie Skewers with Molasses Lime Glaze
For glaze:
1⁄2 cup molasses
1⁄2 cup fresh squeezed lime juice
5 cloves garlic, minced
1 Tablespoon lemongrass, minced
1 Tablespoon ginger, grated
Fresh ground black pepper and a pinch of sea salt
For skewers:
2 summer squash, cut into cubes
1 red bell pepper, cut into squares
2 eggplant, peeled and diced
1 pint baby tomatoes
15-20 6-inch bamboo skewers
Instructions:
1) Whisk together glaze ingredients, set aside.
2) Skewer vegetables, alternating squash, pepper, eggplant, and tomato, and repeat
3) Heat the grill to medium heat
4) Place skewers down on the grill and brush with molasses glaze, rotating frequently over hot
spots. Brush each side once rotated.
5) Transfer to a platter and brush with glaze one final time.
