Grilled Goat Cheese & Plum Toastie
8 slices sour dough or soft milk bread
1⁄2 cup goat cheese
1⁄2 cup grated Swiss cheese or Gouda, grated
16 small plums, washed and sliced, pit removed
Butter
1) Lay out bread and divide goat cheese between 4 slices of bread. Sprinkle grated swiss
or gouda over goat cheese.
2) Lay plum slices on top of the cheese. Top each slice of cheese-plum with the remaining slices
of bread.
3) Brush the griddle with butter and brush the bread with butter.
4) Toast bread on both side. Eat warm.
Agave-Nectarine Butter
2 pounds nectarines, pitted and chopped
1 Tablespoon fresh squeezed lemon juice
1⁄2 cup water
1⁄4 cup agave syrup (or honey from Sunny Honey)
1 vanilla bean, scraped
1) In a heavy saucepan, combine fruit, lemon juice, and water. Cover and bring to a simmer.
Stirring frequently to prevent scorching. Cook until fruit is soft. Remove from heat and
puree in a blender.
2) Add the mixture back into the small pot. Add agave (or honey) and vanilla bean and reduce
down until thick.
3) Refrigerate for up to one week.
