Grilled Bacon & Potato Salad with Mustard and Vinegar
4 slices bacon, diced (Don & Joes)
1 pound baby potatoes, cut in half
1 small shallot, minced
2 Tablespoons mustard
2 teaspoons Apple Cider Vinegar
1 teaspoon minced dill
1⁄2 teaspoon Agave syrup
Pinch of sea salt & fresh ground black pepper
Instructions:
1) Bring a small pot of water to a boil and cook potatoes for 5 minutes. Remove from water
and place in a bowl, covered with a towel to steam
2) In a hot skillet, add diced bacon and cook for 3-4 minutes. Add in shallot and potatoes,
cooking until done. Stir in mustard, vinegar, dill, and agave syrup. Finish with salt and
pepper.
