Fire Roasted Corn Griddle Cakes
2 ½ cups fresh fire roasted corn kernels
3 large eggs
¼ cup milk
3 Tbsp butter, melted
¾ cup flour
¼ cup corn meal
1 tsp salt
1 tsp pepper
Start by grilling corn until all sides are lightly charred.
Remove kernels from corn with small pairing knife.
Quickly beat eggs with milk and melted butter. Stirn in corn kernels.
In a separate bowl, mix together flour, cornmeal, salt and pepper.
Gently fold in corn mixture into flour mixture. Spoon 1-2 Tbsp of batter into hot buttered griddle.
Cook 2 to 3 minutes on each side.
Top with savory whipped cream or relish.
