Blueberry Buckle
¾ cup sugar
½ cup butter, softened (unsalted is best)
1 cup flour (or substitute all-purpose GF flour)
1 teaspoon baking powder
1 teaspoon vanilla
2 eggs
1 ¼ cup blueberries
Preheat oven to 350 degrees.
Cream together the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs.
Beat well.
Spoon the batter into a greased baking dish (9x9 works great). Place the blueberries on top of
the batter and press lightly. Sprinkle with optional lemon juice and cinnamon (or substitute
cardamom.)
Bake for 40 minutes (check until toothpick inserted into cake comes out clean; up to 1 hour
baking time.)
Remove and cool, or serve warm!
