Honey-Thyme Poached Apricots
Recipe:
¾ cup honey // Sourced from Sunny Honey
¾ cup prosecco // Sourced from Delaurenti
6 cups of water
6 sprigs thyme // From Chef Traci’s Garden - Lemon Thyme and Lime Thyme
1 ½ Tbsp white vinegar // Sourced “White Condiment” from Truffle Queen
12 Apricots // CSA
In a sauce pan add the honey, prosecco, water, white vinegar, and fresh herbs.Stir together over
medium heat until honey is thoroughly mixed with other liquids.
Carefully add the apricots with a slotted spoon ensuring the apricots are fully submerged in the
poaching liquid. (Add more water if needed). Bring to a boil over medium heat, and then reduce
to a simmer. Cook for 15 minutes, until apricots are fork-tender.
Remove apricots from poaching liquid and set aside. Increase the heat and continue reducing down
the poaching liquid until reduced to a syrup. Remove the herbs and pour the syrup over the poached fruit.
Serving Options:
Serve over creamy goat-sheep cheese, cheese curds, or other creamy light cheese from The
Cheese Box.
Serve alongside seared steak from Don & Joe’s.
Serve with halibut from Pike Place Fish.
Serve with a scoop of Hellenika gelato!
