Come in from the cold to sip a steaming cup of broth with Atrium Kitchen and Rachael Mamane, author of Mastering Stocks and Broths. We'll spend the morning reviewing what goes into a pot -- the ingredients, science and nutrition of stocks and broths -- and why it's better than what you find in a box or can. Rachael will walk through the process of making a classic culinary stock, using quality bones and vegetables from local farms, and detail the importance of every step -- from water quality to savory sipping. The session will end with a blind tasting, where we'll compare homemade and retail varieties, and review additional products that can be made from animal bones and fat. Participants will go home with a signed copy of Rachael's book.
